Ingredients
- 1 onion
- 1 red pepper
- 2 celery
- 4 garlic cloves
- 4 spring onions
- 1 can chopped tomatoes
- vegetable stock
Method -
1. Fry all the veg (celery, peppers, onions spring onions and garlic (crushed))until soft- make sure to not brown
2. Add the chopped tomatoes and vegetable stock, and water if you believe necessary, then place a lid over the pan and let it simmer for 15 mins.
3. Pour the soup into a food processor or use a processor wand to blend the soup.
