    Ingredients- 

    • Olive oil
    • 1 white onion (sliced)
    • 120G chorizo 
    • 2x cans chopped tomatoes 
    • 1 tablespoon caster sugar
    • 600g gnocchi
    • 4 chicken breasts (diced)
    • 2 pepper
    • 125g mozzarella 
    • basil
    • 2 chilis
    • 8 Garlic cloves (crushed)
    • 2 peppers (sliced)
    • cheddar cheese 

    Method:

    1. Heat oil in pan, add the crushed garlic and your diced chicken breasts and sliced onions. cook until the outside of all the chicken has turned white. 
    2. Add the chorizo and cook for 5 minutes. 
    3. Tip in the chopped tomatoes, add the sugar and season with salt and pepper. 
    4. Bring to a simmer before adding the gnocchi and the peppers. Cook for 8 minutes, stirring often until soft.
    5. Stir in 3/4 of the mozzarella into the pot with basil. 
    6. Pour the mixture  into an oven safe dish and cover with the cheddar cheese and the remaining mozzarella. bake in oven until cheese is melted and serve.
