Ingredients-
- Olive oil
- 1 white onion (sliced)
- 120G chorizo
- 2x cans chopped tomatoes
- 1 tablespoon caster sugar
- 600g gnocchi
- 4 chicken breasts (diced)
- 2 pepper
- 125g mozzarella
- basil
- 2 chilis
- 8 Garlic cloves (crushed)
- 2 peppers (sliced)
- cheddar cheese
Method:
- Heat oil in pan, add the crushed garlic and your diced chicken breasts and sliced onions. cook until the outside of all the chicken has turned white.
- Add the chorizo and cook for 5 minutes.
- Tip in the chopped tomatoes, add the sugar and season with salt and pepper.
- Bring to a simmer before adding the gnocchi and the peppers. Cook for 8 minutes, stirring often until soft.
- Stir in 3/4 of the mozzarella into the pot with basil.
- Pour the mixture into an oven safe dish and cover with the cheddar cheese and the remaining mozzarella. bake in oven until cheese is melted and serve.
